Reducing Food Loss in the Tourism Sector
"Food loss" refers to food that is still edible but is discarded.
According to the Food Loss Reduction Guidebook (FY2024 edition) issued by the Japanese government,
Japan generates 4.72 million tons of food loss annually.
This amount is nearly equivalent to the 4.8 million tons of food aid provided worldwide by the United Nations World Food Programme (WFP) in 2022.
Food lodd in Japan is divided equally between:
businesses (2.36 million tons, 50%) and households (2.36 million tons, 50%).
Among businesses, the food service industry accounts for 600,000 tons, while the retail industry produces 490,000 tons.
As an international tourism resort area,
Niseko Town is estimated to generate a larger amount of food loss related to the tourism industry compared to other regions.
To promote sustainable tourism development, Niseko Town is working together as a community to reduce food loss.

Doggy Bag (Take-home Food Container) Project
As part of efforts to build a sustainable tourism destination, Niseko Town and the Niseko Resort Tourist Association are
implementing initiatives to reduce food loss across the tourism and restaurant industries.
One such initiative is the Doggy Bag Pilot Project, which encourages diners to take home leftover food using specially designed containers.
Niseko Town is blessed with an abundance of delicious local foods,
from fresh vegetables to processed products like cheese.
We hope visitors can fully enjoy the taste of Niseko without letting any of it go to waste.
For this project,
original Niseko doggy bags have been produced and are being tested at participating restaurants in the town.
When taking food home, please take proper precautions to ensure food safety and hygiene.

In collaboration with local learning and food education programs,
Niseko Town regularly hosts cooking classes for children to learn about food loss.
In these classes,
participants first learn about the issue of food loss,
then, under the guidance of a registered dietitian, they practice cooking methods that minimize waste.
They also visit local farms to hear directly from producers,
creating opportunities for both classroom learning and hands-on experience.
