Reducing food waste in the tourism sector
"Food waste" refers to food that is thrown away even though it is still edible.
According to the government's document (Food Loss Reduction Guidebook (2024 Edition))
In Japan, 4.72 million tons of food waste is generated annually.
This amount is roughly equivalent to the amount of food assistance provided by the United Nations World Food Programme (WFP) in 2022 (approximately 4.8 million tons).
Food waste in Japan is
2.36 million tons (50%) were emitted from businesses and 2.36 million tons (50%) from households.
Among businesses, the restaurant industry accounted for 600,000 tons and food retailers for 490,000 tons.
In Niseko Town, an international tourist resort,
It is estimated that food waste related to tourism is greater than in other regions,
In order to promote the development of sustainable tourism regions,
We will work together as a community to reduce food waste.

Demonstration project for doggy bags (bags for taking home leftover food)
As part of efforts to create a sustainable tourism Niseko Town in Niseko Town, Niseko Resort Tourism Association and
We would like to work towards reducing food waste across the tourism and food service industries as a whole.
As part of this initiative, we will be conducting a demonstration project for doggy bags (containers for taking home leftover food).
農業も盛んなニセコ町では、新鮮野菜のほか、
チーズなどの加工品も含め、おいしい「食」が溢れています。
ぜひ、ニセコ町の「食」の魅力を、余さず楽しんでいただきたいと思っています。
そこで、今回の取組では、
独自のドギーバックを製作し、希望する町内飲食店等で試行いただきます。

In cooperation with local children's local learning and food education activities,
We hold cooking classes on a regular basis to teach people about food waste.

After learning about food waste in the previous section,
Learn cooking methods with less waste under the guidance of a registered dietitian,
We actually visited the farmers who produce the ingredients and listened to their stories.
It provides a learning environment through classroom lectures, practical training and interaction.
